Shaich created Au Bon Pain Co. in 1981 with his late partner Louis Kane. The company went public in 1991. Two years later, after acquiring Saint Louis Bread Company, they changed the named to Panera.
Shaich teamed with one of the investors, a commercial real-estate veteran named Louis I. Kane, and revamped the Au Bon Pain concept, using what he learned from watching his baguette customers. "You didn't need a Harvard degree to see the opportunity," Shaich recalled in an interview with Wall Street Journal writer Carol Hymowitz.
The announcement of Shaich’s change in responsibilities came minutes after Panera disclosed plans to buy Au Bon Pain, the bakery-cafe concept that propelled Shaich and late business partner Louis Kane to prominence. The company that would become Panera eventually sold Au Bon Pain to focus on what was then called St. Louis Bread.
